Chocolate-Caramel Pecan Candies

Whole pecans filled with a sugar free caramel sauce, dipped in homemade dark chocolate.

So after making the Chocolate-Drizzeled Caramel Filled Pecans yesterday, I got inspired to go a step further and dip each one of the caramel filled pecans in chocolate. I dipped mine in a dark homemade chocolate, but you could also melt your favorite dark chocolate to dip them into. This is an easy to make candy that tastes delicious and could be a great gift for a special occasion. Just place them all in a cute wooden box with a note…. I decorated mine with dried Goji Berries.

Chocolate-Caramel Pecan Candies
  • ½ cup Medjool dates
  • 1½ tbp water
  • 80 whole raw pecans
  • 8 oz of homemade dark chocolate (or you can just melt your favorite dark chocolate)
  1. to make the caramel sauce, remove the pits from the dates and process them in a food processor along with 1½ tablespoons of water until creamy
  2. scoop a small amount of the caramel sauce on one side of a pecan and then place another pecan on top, creating a sandwich
  3. make your homemade chocolate or melt your favorite dark chocolate and dip each caramel filled pecans in chocolate

    Yields 40 Chocolate-Caramel Pecan Candies
