Low-carb Chocolate Truffles
- remove the pit from the dates and blend it in Vitamix until it becomes a paste
- add vanilla, raw cacao powder, shredded coconut, salt and pecans
- blend all ingredients together
- remove from blender
- wet hands with water and roll the mixture into small truffles and roll it into shredded coconut
- chill in fridge for about 1 hour and serve.
This makes a small batch, about 10 truffles.
