Low-carb Chocolate Truffles

  • remove the pit from the dates and blend it in Vitamix until it becomes a paste
  • add vanilla, raw cacao powder, shredded coconut, salt and pecans
  • blend all ingredients together
  • remove from blender
  • wet hands with water and roll the mixture into small truffles and roll it into shredded coconut
  • chill in fridge for about 1 hour and serve.

    This makes a small batch, about 10 truffles.
