Paleo Chocolate Chip Banana Loaf
  • 2 cups almond flour
  • 1 cup whole raw pecans
  • 3 eggs
  • 3 bananas (I used apple bananas, about 1 ½ cups)
  • 1 tbs raw honey
  • ¼ cup coconut oil (melted)
  • 1 tbs vanilla extract
  • 1 tsp baking soda
  • ½ tsp salt
Chocolate Chips
  • for the chocolate chips I made my 84% dark chocolate (recipe here) and chopped it up into small pieces
  1. process the bananas, eggs, vanilla, honey and coconut oil in a food processor (I used a Vitamix blender)
  2. add the pecans and process
  3. combine almond flour, salt and baking soda in a bowl and add it slowly to the wet mixture
  4. process until all is well combined
  5. scoop the batter into a 7.5 x 3.5 loaf pan and fold in the chocolate chips
  6. bake at 350° for about 45-50 minutes
  7. remove from oven and allow to cool
  8. serve with Orange Marmalade (optional)

    This is the most delicious recipe. I am ok eating it without the marmalade , It satisfies my sugar needs. I loved it. Thanks for the recipe.
