Paleo Carob Chip Cookies With Raw Cacao Nibs

These are a delicious treat when craving sweets on a paleo diet. I made them with unsweetened carob chips, but you can experiment with semi-sweet chocolate chips. Next time I’ll add some macadamia nuts to it :)

Paleo Carob Chip Cookies With Raw Cacao Nibs
  • 2½ cups almond flour
  • ¼ tsp sea salt
  • ½ tsp baking soda
  • 1 egg
  • ¼ cup coconut oil
  • 2 tbs raw honey
  • 1 tbs vanilla extract
  • 2 tbs unsweetened carob chips
  • 2 tablespoons raw cacao nibs
  1. Combine almond flour, salt and baking soda in a food processor
  2. Mix coconut oil, honey, vanilla and egg until dough forms
  3. Stir in carob chips and cacao nibs
  4. Scoop about a tablespoon of the dough onto a parchment lined baking sheet
  5. Press balls of dough down gently
  6. Bake at 350°F for 10-12 minutes
  7. Cool for 15 minutes

    Makes about 12 cookies
