Paleo Coconut Brownie Bars
Ingredients
Brownie:
- ½ cup blanched almond flour
- ¼ cup raw pecans
- ½ teaspoon vanilla extract
- 3 tablespoons coconut oil, melted
- 2 tablespoons raw cacao powder
- ½ tablespoon raw honey
Coconut:
- 5 tablespoons full fat coconut milk
- 2 tablespoons coconut butter
- 1 cup unsweetened shredded coconut
- 1 to 2 tablespoon honey, add more if you like it sweeter
- 1 teaspoon vanilla extract
- 2 eggs
- pinch fine himalayan salt

Instructions
Brownie:
- Chop the pecans in a food processor and mix with the almond flour, vanilla, coconut oil, cacao powder and honey.
- Line an 8x8-inch baking dish with parchment paper and evenly spread the brownie batter in the dish.
Coconut:
- Using a rubber spatula, mix all the ingredients for the coconut layer together and pour it evenly over the brownie.
- Bake for 12 minutes at 350°F or until set.
- Let brownie cool on a wire rack before cutting into squares.

Keep refrigerated.
