Low-carb Chocolate Truffles
Ingredients
- 4 large Medjool dates
- ½ teaspoon vanilla extract
- 2 tablespoon raw cacao powder
- 2 tablespoon unsweetened shredded coconut
- ½ cup raw pecans
- pinch fine himalayan salt

Instructions
- Remove the pit from the dates and blend it in Vitamix until it becomes a paste.
- Add vanilla, raw cacao powder, shredded coconut, salt and pecans. Blend all ingredients together.
- Wet hands with water and roll the mixture into small truffles and roll it into shredded coconut.
- Chill in fridge for about 1 hour and serve.

This makes a small batch, about 10 truffles.
