Ingredients

large Medjool dates
▢
½
teaspoon
vanilla extract
▢

tablespoon
raw cacao powder
▢
2
tablespoon
unsweetened shredded coconut
▢
½
cup
raw pecans
▢
pinch
fine himalayan salt
Instructions
Remove the pit from the dates and blend it in Vitamix until it becomes a paste.
Add vanilla, raw cacao powder, shredded coconut, salt and pecans. Blend all ingredients together.
Wet hands with water and roll the mixture into small truffles and roll it into shredded coconut.
Chill in fridge for about 1 hour and serve.
Notes
This makes a small batch, about 10 truffles.
