Whole pecans filled with a sugar free caramel sauce, dipped in homemade dark chocolate.
So after making the Chocolate-Drizzeled Caramel Filled Pecans yesterday, I got inspired to go a step further and dip each one of the caramel filled pecans in chocolate.
I dipped mine in a dark homemade chocolate, but you could also melt your favorite dark chocolate to dip them into.
This is an easy to make candy that tastes delicious and could be a great gift for a special occasion. Just place them all in a cute wooden box with a note.... I decorated mine with dried Goji Berries.

Chocolate-Caramel Pecan Candies
Ingredients
- ½ cup Medjool dates
- 1½ tablespoons water
- 80 pecans
- 8 oz of homemade dark chocolate, or you can just melt your favorite dark chocolate

Instructions
- To make the caramel sauce, remove the pits from the dates and process them in a food processor along with 1 ½ tablespoons of water until creamy.
- Scoop a small amount of the caramel sauce on one side of a pecan and then place another pecan on top, creating a sandwich.
- Make your homemade chocolate or melt your favorite dark chocolate and dip each caramel filled pecans in chocolate.
