The other day I made some fresh macadamia nut butter and I wanted to make something different with the left over. I came up with the idea of making a healthy version of chocolate fudge and my main ingredient was the macadamia nut butter. The fudge came out so creamy and delicious and best of all, it is paleo and low carb friendly with no added sugars.

Paleo Chocolate Macadamia Nut Fudge
Ingredients
- ½ cup macadamia nut butter
- ¼ cup raw cacao powder
- ¼ cup coconut oil, melted
- ¼ cup macadamia nuts, chopped
- 1 tbs raw honey, optional
- ¼ teaspoon vanilla extract
- pinch fine himalayan salt

Instructions
- Blend all ingredients together (I used the vitamix on medium speed).
- Line an 8-inch baking pan with parchment paper and pour mixture.
- Put in the freezer for about 20 mins or until it hardens.
- Cut into squares and serveKeep refrigerated or in the freezer.
Notes
Make your own macadamia nut butter by blending macadamia nuts in Vitamix or food processor until it becomes buttery and smooth.
