Paleo Chocolate Macadamia Nut Fudge

The other day I made some fresh macadamia nut butter and I wanted to make something different with the left over. I came up with the idea of making a healthy version of chocolate fudge and my main ingredient was the macadamia nut butter. The fudge came out so creamy and delicious and best of all, it is paleo and low carb friendly with no added sugars.

Paleo Chocolate Macadamia Nut Fudge
  • ½ cup macadamia nut butter (blend macadamia nuts in vitamix or food processor until it becomes butter)
  • ¼ cup raw cacao powder
  • ¼ cup coconut oil (melted)
  • hand full of macadamia nuts chopped
  • 1 tbs raw honey (optional)
  • ¼ tsp vanilla
  • pinch of salt
  1. blend all ingredients together (I used the vitamix on medium speed)
  2. line baking pan with parchment paper and pour mixture
  3. put in the freezer for about 20 mins or until it hardens
  4. cut into squares and serve

    Keep refrigerated or in the freezer

    Because macadamia nuts are so expensive here on the west coast of Canada, is it okay to substitute something like almond butter?

      you can substitute the macadamia nut butter for any nut butter of your choose. It will just taste different…Making this with hazelnuts would be pretty good too, I think I am going to try it next :)

        Thank you very much! I asked about almond butter because I know we have some in the house right now. :) Also I just realized that there is no baking- most excellent! :D

    How many nuts does it take to make 1/2 cup of butter? Anyone know?

      1 cup of macadamia nuts makes 1/2 cup of butter

    I just made this yesterday with hazelnut butter, a sprinkle of ground cloves and a bit of shredded coconut. I can’t even describe how decadent it was! The cloves really helped bring out the chocolatey aroma. I also added a bit of liquid stevia. All I can say is: WOW!

    I just made these using half almond butter, half macadamia butter, shredded coconut on top and two dates instead of honey… divine!
