Paleo Chocolate Delight Coconut Bars

paleo chocolate coconut barpaleo chocolate coconut bar2

I saw this recipe on swisspaleo.ch and I thought of giving it a try. I used 7 medjool dates instead of 8, 2 tbs of honey and used pecans for the crust. I also made my own chocolate to drizzle on top of the coconut layer (recipe below). It turned out so delicious that I decided to share the recipe here. So here is my version of it:

WOW! I am so happy to have found your website. I’m on a diet very similar to the Paleo diet for stomach illness, and I miss the treats. Thank you so much for posting these recipes! I can’t wait to try them!

Uh oh, a new addiction ;-)….these bars are so quick and easy since they’re no-bake. Had to improvise a bit with what I had on hand….for the crust used a combo of pecans, almonds and hazelnuts, only had 6 dates so added a few dried figs and for the topping just melted some chocolate chips with a little coconut oil to thin and drizzled – AMAZING!!! Thank you – I love your website – just found it a few weeks ago and have already made several things!!
