I had some left over cauliflower and I wanted to make something different with it. It turned out much better than I expected and I wanted to share it here. As always, this is a low carb recipe!
To go along with it I sautéed in olive oil some red onions, with red cabbage and kale and 2 fried eggs.

Roasted garlic mashed cauliflower
- 1 steamed cauliflower
- 1 clove garlic, roasted
- ½ cup shredded mozzarella
- 2 tablespoons green onions
- 1 teaspoon read pepper flakes
- 1 tablespoon olive oil
- 1 teaspoon fine himalayan salt

- Pure the cauliflower (I used a blender ).
- Mix all other ingredients and serve.
Store leftover in the fridge.
