Paleo Peppermint Bark

I love this time of year, especially now that I can share with you the healthy alternatives to sugar- and chemical-laden junk foods and how it is possible to have delicious, healthy, and nourishing sweets. If you are not hosting a gathering at your place this holiday season, make sure to prepare and bring a healthy treat and side dish that you can enjoy without guilt. Going to a party prepared is the key to surviving all the unhealthy temptations that will present themselves. Who can resist a layer of creamy peppermint dark chocolate and another of creamy coconut butter, topped with fresh tart cranberries? This peppermint bark is the perfect healthy treat for this holiday season and I am sure everyone at the party will absolutely love this delicious and refreshing dessert.

Paleo Peppermint Bark
  • ¾ cup dark chocolate chips
  • ½ teaspoon peppermint extract
  • 2 tablespoons coconut milk
  • ¾ cup coconut butter, melted*
  • handful fresh or dried cranberries, chopped
  1. melt the chocolate chips in a bowl over simmering water (double boiler)
  2. mix in the peppermint extract and coconut milk to the melted chocolate until smooth. If your chocolate becomes thick, add some coconut oil, 1 tablespoon at the time until you achieve a desired consistency.
  3. line a 9-inch or 8-inch pan with a large piece of parchment paper covering the bottom and all four sides of the pan, and spread the chocolate across the bottom of the pan
  4. freeze or refrigerate until chocolate sets
  5. pour melted coconut butter evenly on top of chocolate and refrigerate for 5 minutes
  6. sprinkle with chopped cranberries and refrigerate until the coconut layer is firm
  7. break or cut into small pieces and serve
*To melt the coconut butter, place the glass jar in a pan with hot water.
You can also make your own coconut butter by adding 2 cups of unsweetened dried shredded coconut to a food processor or high speed blender and processing until the coconut turns into a smooth creamy paste.

Recipe serves 10+ people. Keep refrigerated.

    That seems like it’s more chocolate than 3/4 cup in the picture. Is this a double batch you pictured?

      Actually the recipe makes more that it’s shown on the picture. The recipe will fill an 8 or 9 inch pan depending how thick you want it.

    can coconut oil be used instead of coconut butter,or is it different?

      Coconut oil and coconut butter is very different. Coconut butter is made by processing dried, unsweetened shredded coconut until creamy, same way peanut butter is made.

    May I ask what chocolate chips you use? It’s hard to get away from soy, soy lecithin, pgbr, sugar, etc. I’d love to find a raw chocolate chip that uses honey or something like that as the sweetener…and no soy!

    I just made this today! I used unsweetened chocolate and added some liquid Stevia to it. It is amazing!!! I am trying hard not to think about the calories in it (I had to add at least 2 tbs coconut oil to thin the chocolate), but am loving the flavor and the texture of the chocolate. I think I might omit the coconut butter and just do the chocolate next time. Thank you!
