Roasted Garlic Basil Cheese Dip and Homemade Gluten Free Basil Crackers

Ingredients

Roasted garlic basil cheese dip:

  • 2-3 medium garlic cloves
  • 6 whole fresh basil leaves
  • 1 cup raw pecans
  • 1/3 cup olive oil
  • 8 oz cream cheese softened
  • 1/2 cup shredded good quality sharp cheddar cheese or parmesan cheese
  • black pepper

Gluten free basil crackers:

  • 2 cups almond flour
  • ¾ tsp salt
  • 1 tbs dried or fresh basil
  • 1 tbs olive oil
  • 2 tbs water

Instructions

Roasted garlic basil cheese dip:

  • roast the garlic in olive oil
  • chop the fresh basil
  • in a blender or food processor, combine all ingredients and process until smooth

Gluten free basil crackers:

  • combine almond flour, salt and basil in a bowl
  • in a separate bowl whisk together the olive oil and water
  • stir wet ingredients into almond flour mixture until thoroughly combined
  • Roll the dough into a ball and press between 2 sheets of parchment paper to ⅛ inch thickness
  • Remove top piece of parchment paper
  • Transfer the bottom piece with rolled out dough onto baking sheet
  • Cut dough into 2-inch squares with a knife or pizza cutter
  • Bake at 350°F for 9-11 minutes, until lightly golden
  • Let crackers cool on baking sheet for 20 minutes
