Vanilla Cookies with Creamy Chocolate/Almond Filling

Vanilla Cookie:

  • in a medium bowl, mix the almond flour, arrowroot powder and salt
  • in a saucepan, melt the butter over medium heat
  • whisk in the vanilla extract and honey with melted butter
  • combine wet and dry ingredients and mix gently with rubber spatula to form batter
  • roll the dough into a ball and press between 2 sheets of parchment paper to about ⅛ inch thickness, then remove the top piece of parchment paper
  • transfer the bottom piece with rolled out dough onto baking sheet
  • cut dough in 1-inch diameter circles using a cookie cutter. If you don't have a cookie cutter you can use a plastic cup.
  • bake at 350°F for about 10 minutes or until the edges are lightly golden
  • let cookies cool on wire rack

Chocolat/Almond Filling:

  • melt the cacao butter in a double boiler over simmering water
  • remove from heat and stir in cacao powder, then honey and almond butter
  • fill each cookie with the chocolate/almond filling and drizzle with melted chocolate
