Vanilla Sandwich Cookies
GLUTEN-FREE | VEGAN | PALEO | KETO
1- Mix the almond flour, arrowroot and salt until there are no more lumps.
2- Mix butter, honey and vanilla, and dry ingredients to form the cookie dough.
3- Roll dough between 2 sheets of parchment paper to 1/8-inch thick.
4- Cut into shapes and arrange cookies on a baking sheet.
5- Bake cookies at 350°F for about 5 to 8 minutes.
6- Melt cacao butter and stir in cacao powder, almond butter, honey and vanilla until combined.
7- To form the sandwich cookies add 1 teaspoon of chocolate, then top with remaining cookies and gently squeeze together.
