Chocolate Chip Banana Pancake (Paleo, Gluten Free)

My husband and I enjoyed these pancakes for breakfast this past weekend and it was a good change from our typical breakfast of scrambled eggs. We had a lot of fun making breakfast together and were both surprised at how delicious the pancakes turned out. These Chocolate Chip Banana Pancakes are grain free and made with almond flour. Enjoy!

Paleo Chocolate Chip Banana Pancake

Chocolate Chip Banana Pancake (Paleo, Gluten Free)
  • 2 small bananas, about 1 cup
  • 2 eggs
  • 5 tablespoons full fat coconut milk
  • 1¼ cup almond flour
  • ¼ teaspoon baking soda
  • 1 tablespoon coconut palm sugar
  • ⅓ cup ground almonds
  • pinch of salt
  • 1 tablespoon (or more) chocolate chips
  • butter for frying
  1. in a medium bowl smash the bananas and mix with the 2 eggs and coconut milk
  2. in a separate bowl, mix together the almond flour, baking soda, salt, coconut sugar, ground almonds and chocolate chips
  3. combine the dry ingredients with the wet
  4. heat the butter in the pan and cook the batter on both sides

Recipe makes about eight 4-inch pancakes

    I made these tonight and they turned out to be a fail. The pancake itself tasted good, but it was all pancake mush. I tried to flip the pancakes and everyone one would break, not cook right, took FOREVER to cook on one side, and it was almost like scrambled eggs but not cooked all the way through. I’ve never had that problem before in pancakes. :/ I’m not sure what I did wrong.

    They take a while to cook to get them light colored. But in the end , they
    Are worth it !!!

    If you take out the chocolate chips, sugar and use coconut oil rather than butter. This makes them Paleo. They are not true Paleo pancakes. Paleo means no sugar, and no butter. These do look good if you are gluten free.

      Butter is now considered paleo, it is listed as an ingredient in paleo cookbooks and most paleo experts consume butter for it’s high fat and nutrient content. Same goes for dark chocolate and Enjoy Life Chocolate Chips (on occasion).

    These were a fail for me too, this recipe might be suited for muffins but is a fail for pamcakes. I also didn’t use butter (a non stick skillet will do) because its dairy and I follow Paleo because I cannot consume dairy due to allergies.

    I was wondering if I could substitute the coconut palm sugar for anything because 1 I don’t know what it is and 2 I’d rather not use sugar. Lol…
